F&B/Culinary Manager (Finance)



Job Description Summary

JOB OVERVIEW:
Manage the food and beverage and culinary operations of the hotel to ensure the achievement of established food and beverage quality and guest service quality standards and departmental revenue and profit goals. The F&B/Culinary Manager will ensure a profitable operation by producing high-quality products and maintaining high service levels. Effectively monitor the daily operations of the Food and Beverage Department, which include the Kitchen and F/B Outlets. They will also provide support and guidance to fellow Banquet personnel to ensure a successful and effective operation ending in a positive guest experience. Adhere to federal, state and local regulations concerning health, safety, or other compliance requirements, as well as brand standards and local policies and procedures.

Job Description

DUTIES AND RESPONSIBILITIES:

  • Train and schedule employees to ensure proper coverage. Monitor performance and recommend corrective action. Alert management of potentially serious issues.
  • Respond in a prompt and professional manner to guest requests and complaints. Make appropriate service recovery gestures according to established guidelines in order to ensure total guest satisfaction.
  • Oversee cash handling and check/credit policies and procedures.
  • Inspect ArtBar daily to ensure high quality food and food presentation and cleanliness.
  • Conduct pre-shift meetings to inform staff of daily events. Review daily specials.
  • Ensure set-up and closing side-work; stocks service station, makes coffee, etc. Preset trays as necessary; prepares flatware "roll-ups".
  • Promote teamwork and quality service through daily communication and coordination with other departments.
  • May routinely greet guests and serve food and beverage.
  • Perform other duties as assigned
  • Monitor quality of service in banquet operations
  • Ensure compliance with all local liquor laws, and health and sanitation regulations
  • Ensure compliance with SOP's in all outlets
  • Understand and be able to prepare payroll and tip distribution
  • Coordinate all banquet related Food and Beverage requirements with the appropriate department
  • Keep kitchen informed of accurate counts for plating
  • Review menu/service
  • Maintain up to date details on banquet functions and communicate to managers
  • Make personal contact with guests and assist them with any requests
  • Supervise proper tabulation of all banquet checks and ensure that all checks are presented to guests for signature
  • Ensure safety, sanitation, and cleanliness of service areas
  • Oversee banquet set-up assignments

Qualifications and Requirements:

  • 2 years related experience preferably in a facility of similar size and complexity, including supervisory experience, or an equivalent combination of education and experience.
  • Bachelor's degree in Hotel Management, culinary arts, or related field preferred.
  • Advanced training in Food and Beverage operations and hotel experience is a plus
  • Excellent communication (verbal/written) skills required
  • Problem solving, reasoning, motivating, organizational and training abilities are essential
  • Alcohol awareness certification and/or food service permit or valid health/food handler card as required by local or state government agency.
  • May be required to work nights, weekends, and/or holidays
